It's 'National Baking Week' this week so we thought we'd share one of our popular bakes with you to make at home!

How to make Workbridge Lemon and Blueberry Scones

For this recipe you will need:
- 400g of self-raising flour
- 100g of unsalted butter
- 300ml of milk
- 60g of caster sugar
- The rinds of 2 lemons
- 150g of blueberries
Let's get baking...
- Heat the oven up to 160C.
- Pour the flour onto a clean work surface.
- Add the sugar and the butter to the flour.
- Knead the mixture together and keep going until you reach a bread crumb consistency.
- Add the lemon rinds and blueberries into the mixture.
- Add the milk in small glugs and continue to knead until it forms a doughy texture.
- Use a cookie or pastry cutter and cut out six circles. The scones should be around 2 and a half cm thick. Remember, the scones will rise in the oven!
- Add the scones to the oven for 10 minutes.
- Check the scones and if they require a little more time, keep them in the oven for a further 5 minutes.
- After that, you're done! Leave them to cool and enjoy on their own, or with jam and cream.
